Mudhura pachadi is a type of sweet curry. It is prepared by cooking pineapple, chilly-coconut paste, and sugar in a yogurt-based sauce. The fruit is cooked in a low flame with turmeric powder and green chilies. Then, the mixture is tempered with sugar and cooked. Grind the coconut with two tbsp. of water to make a smooth paste. Add the ground coconut and stir well.
For the Madhura curry, the fruits should be slightly overcooked. However, the grapes should not be fully cooked. They should retain their crunchiness. The Curd/Yogurt should be slightly sour. It is important not to use too much Jaggery or Green Chilies as this will make the dish sour. Adjust the amount of Green Chillies and Jaggery according to taste.
