Broccoli Salad
Dressing:
1/2 cup olive oil mayo — can be substituted for kefir, avocado, greek yogurt
1/4 cup milk — you can use coconut, dairy, soy, almond, etc. depending on your preference
2 TBSP apple cider vinegar
About a TBSP of sweetener — you can use honey (warm to make it easier to blend), raw sugar, or any number of sugar substitutes
Combine dressing ingredients. Adjust to taste. To make it more savory, you could add a little sea salt, paprika, dried onion bits, etc.
Chop broccoli into small pieces. I usually add raisins and sunflower seeds. I’ve also added tuna (doesn’t taste exceptional, but it’s a nice way to knock down some extra protein). Be creative with add-ins — shredded chicken, shredded or chunked carrots, craisins or other dried fruit, nuts, strawberries, onion straws, grated cabbage, celery…
I love this salad because it is versatile, quick, and only needs a few common ingredients. Add it to your repertoire and next time you stand one end of the looming produce section, remember this post and get yourself some broccoli.
